Pepper Mustard Wet Rub

This is a great tasting rub that can be used as a marinade or a wet rub. It has a spicy, peppery taste that goes great with prime rib.

Ingredients:

  • 1/4 cup canola oil
  • 1/4 cup peppercorns, cracked ( put whole peppercorns in a zip-lock and crush with the back of a pan)
  • 2 cloves garlic, chopped
  • 1/2 cup Dijon mustard

Directions:

  • Preheat skillet to medium heat.
  • Add oil, let oil come up to temperature for a 1-2 minutes.
  • Add crushed peppercorns and cook for 5 minutes stirring occasionally.
  • Add chopped garlic and cook for 5 minutes, stirring occasionally. Careful not to burn the garlic.
  • Remove from heat.
  • In a bowl, add the Dijon mustard. Mix in peppercorn and garlic oil. Stir well.

Guinness Gravy

A full flavored gravy for chicken and turkey. Guinness beer is used as the base to give this gravy a rich and deep taste. Other stout or porter beer can substitute for the Guinness.

Ingredients:

  • 1/2 pound mushrooms, sliced
  • 2 cups Guinness
  • 2 cups chicken broth
  • 3 tablespoons flour
  • 2 tablespoons butter
  • salt to taste

Cooking:

  • Saute the mushrooms.
  • In a large sauce pan, on medium-high heat add flour and butter. Stir frequently for 5 minutes.
  • Add the Guiness, chicken broth, and white wine.  Continue stirring.
  • Bring to a boil and reduce to low, add sauteed mushrooms.
  • Cook on low for 10-15 minutes, stirring occasionally.
  • Add salt to taste.

Pre-Xmas Prime Rib

This year, I couldn’t wait until Christmas to cook Prime Rib. I decided to cook this years’ holiday Prime Rib the weekend before Christmas. It turned out totally awesome.

I had a 4 rib roast and followed the preparation and cooking instructions here: http://whatscookingamerica.net/Beef/ClassicPrimeRib.htm. I also used the horseradish & blue cheese sauce recipe. Both were excellent.

One addition I made was to make my own pepper and mustard rub to give the meat a spicy peppery crust that is big taste.
