Smoked Chicken Nachos

These chicken nachos have a smoky taste that tastes great for a snack or sporting event.
The chicken was smoked until fork tender and shredded. If you don’t have smoked chicken handy a grilled chicken breast will taste great too.
Assemble the nacho with a layer of chips, cheese and chicken. Repeat with a second layer.
Bake at 400 degrees until cheese is melted.
Serve with avocado on top.
The Big Game Eats 2009

Here is some really great tasting food we cooked up for the this years’ “Big Game” ( Boo Steelers). It was an awesome feast and all the food was very appetizer-ish.
1. Home made potato chips. Slice thin ( use a mandolin) fry in vegetable oil and season with salt, pepper, garlic and parsley.
2. Home made pesto served on bread.
3. Smoked beef brisket served on bread for bite size sandwich snacks.
4. Beans !

I’m watching a ton of football with the playoffs in full gear right now. I thought I’d upload a few pictures of some super nachos that I like to cook this time of year.
Seafood goes really well on nachos — I’ve tried shrimp, scallops, lobster and white fish. It’s a great way to get some variety in the nacho dish and some really great taste.
This is a lobster nacho on blue chips and melted cheese. Topped with salsa, sour cream and a squeeze of lime.

Here is a shrimp nacho on round tortilla chips and melted cheese. Topped with tomatoes, green peppers and sour cream.
