Fourth of July weekend is the kickoff to summer in my house. We always have a lot going on for the holiday so I want great food that is easy to cook. For me that means cooking on the grill.
Flat iron steak with BBQ rub and served with molasses.
A warm and flowing butter sauce sweetened with mango. Cracked peppercorns added for some spice. This sauce makes you want to keep eating whatever it is on. Goes great with seafood, especially lobster.
Lobster with Mango Butter Sauce
Ingredients:
1 mango
2 tablespoons butter, unsalted
3-4 peppercorns, cracked
pinch of salt.
Preparation:
Juice the mango until you have 1-2 tablespoons juice.
Dice up 1-2 tablespoons of the remaining mango meat.
Cooking:
Heat all ingredients in sauce pan on low until butter is melted. Stir occasionally.
My good friend Ric put together this awesome cooking video. Ric is cooking up a great tasting and simple halibut recipe. The halibut is topped with Roma tomatoes and smothered with Swiss cheese. From start to finish it takes about 35 minutes to prepare and cook. Check it out —
I cooked this up for my wife’s birthday. She totally loves scallops ( I do to). The lemon sauce was perfect and added a nice peppery fresh taste to the scallops.
- Veggies — Green & Yellow Zuchini, Asparagus. Cut into spears, Toss in olive oil, salt and pepper. To cook, put on hot grill until veggies are marked and then move to tin foil and place on upper rack.
- Lemon Sauce — 1 large lemon, Cracked peppercorns, 2 tbsp butter. Combine into small sauce pan and cook on low.
- Scallops — Clean and remove feet. Season with salt, pepper and 1 squeezed lemon. Grill until done.
To serve, place veggies on plate. Place scallops on veggie bed and spoon lemon sauce over each scallop.
I’m watching a ton of football with the playoffs in full gear right now. I thought I’d upload a few pictures of some super nachos that I like to cook this time of year.
Seafood goes really well on nachos — I’ve tried shrimp, scallops, lobster and white fish. It’s a great way to get some variety in the nacho dish and some really great taste.
This is a lobster nacho on blue chips and melted cheese. Topped with salsa, sour cream and a squeeze of lime.

Here is a shrimp nacho on round tortilla chips and melted cheese. Topped with tomatoes, green peppers and sour cream.
This steak and lobster meal is an awesome version of surf and turf. I cooked this for my wife on Mother’s day and she totally loved it.
It’s got beef tenderloin, lobster and a vegetable medley marinated in a sweet sauce to tie everything together.
The tenderloin and lobster are cooked on the grill. The lobster is served with an apple butter. For the apple butter follow this recipe and substitute apple juice in for the mango.
The vegetable medley is corn, carrots, and red pepper all cut up in squares. The vegetables marinade in a honey, olive oil, and curry powder, seasoned with salt and pepper.
