Salmon with Pineapple Salad

A light and flavor packed meal is awesome on a hot summer day. The sweetness of this salmon matched with the sweet pineapple salad is a great combination.  Serve it family style for a decadent look this dinner will disappear quickly as everyone will want to come back for more.

The salad is romaine lettuce and grilled pineapple tossed in a teriyaki vinaigrette. The vinaigrette is olive oil, teriyaki sauce, apple cider vinegar, lime juice and a small amount of chili oil.

The salmon is cooked using this recipe .

Guacamole is a simple snack and it’s really fun to let kids help. Kids really enjoy helping and learning about food and cooking. In this video we are making a simple and great tasting guacamole with my twins. 

Ingredients

  • 4 Avocado’s
  • 1 tomato
  • 1 lime ( or lime juice

This is one of my favorite summertime meals. It’s easy to buy, prep and cook. With only four ingredients you would never guess something could taste so good.

Ingredients

  1. Sirloin steak
  2. Steak seasoning ( salt and pepper is an excellent substitute)
  3. Corn on cob, husked
  4. Mushrooms

Prep:

  • Apply steak seasoning liberally to steak.
  • Wrap mushrooms and corn in tin foil.

Cook:

  • Cook an very hot grill until steak is done to liking. About 8-9 minutes for me.

Eat:

Steak, Corn and Mushrooms

A pineapple and banana smoothie is a great way to start the day. Refreshing, tasty and smooth. This simple recipe has 4 ingredients and only takes 5 minutes to prepare.

Ingredients:

  • 2 cups orange juice
  • 1/2 cup yogurt
  • 1 banana
  • 1 1/2 cups fresh pineapple

Directions:

  • Put all ingredients in a blender and blend on high for 3-4 minutes until smooth.

This turkey nacho is a great snack and a good way to use up some of those turkey leftovers. The jalepeno cranberry adds an awesome spice level to this nacho.  Simple to make and tastes even better.

Turkey and Jalepeno Cranberry Nacho

Ingredients

  • 1/2 can cranberry sauce with whole cranberries
  • 1 jalepeno, diced (keep seeds to increase heat)
  • 1/2 bag round tortilla chips
  • 1 cup turkey, diced
  • 2 cups mozzerrella cheese, grated
  • 1/2 cup sour cream

Directions:

  • Add cranberry sauce and jalepeno to a sauce pan. Heat on medium for 5 minutes and reduce to low for another 10.
  • Pre-heat over to 375
  • Place 1 layer of chips on a baking dish or pizza stone.
  • Top chips with 1/2 turkey and 1/2 cheese.
  • Place another layer of chips on top.
  • Again, top chips with 1/2 turkey and 1/2 cheese.
  • Bake for 10-15 minutes or until cheese is melted.

To serve top with jalepeno cranberry sauce and sour cream.

A roast beef sandwich is that perfect comfort food to cook up the day after a big prime rib dinner.

Roast Beef Sandwich

Ingredients:
  • 2 pieces wheat bread
  • 2-3 thin slices prime rib, torn into pieces.
  • 2-3 slices cheddar cheese
  • 1 tablespoon horseradish
  • 1 tablespoon sour cream
  • 1 tablespoon butter

Preparation:

  • Place roast beef on 1 piece of bread. Top with cheese.
  • Mix horseradish and sour cream together. Spread on remaining piece of bread.
  • Assemble sandwich.

Cooking:

  • Heat pan on medium heat.
  • Add 1/2 tablespoon butter to hot pan. When butter is melted turn pan to coat.
  • Place sandwich in pan, cover and cook until golden brown.
  • Remove sandwich and add remaining butter. When butter is melted turn pan to coat.
  • Add sandwich back to pan; uncooked side down.
  • Cook until golden brown and remove sandwich from pan.

Let sandwich cool for a couple minutes, cut and serve !
