Chicken Soup and Sandwich

My wife recently had surgery and she asked for a soothing meal that warmed her up. Soup and sandwich always makes me feel better and relaxes my mind and body.

I grilled a couple chicken breasts seasoned with olive oil and rosemary pepper. The chicken is used in both the chicken noodle soup and sandwich.

The soup is started with a carrot, onion and celery base. Potatoes and chicken stock are added.  Once the potatoes start to soften up add broken up linguine noodles and the cooked chicken. Add salt and pepper for seasoning.

The sandwich uses a foccacia bread and honey mustard spread. Add chicken and cheddar cheese. It’s cooked until the cheese starts to melt.

A roast beef sandwich is that perfect comfort food to cook up the day after a big prime rib dinner.

Roast Beef Sandwich

Ingredients:
  • 2 pieces wheat bread
  • 2-3 thin slices prime rib, torn into pieces.
  • 2-3 slices cheddar cheese
  • 1 tablespoon horseradish
  • 1 tablespoon sour cream
  • 1 tablespoon butter

Preparation:

  • Place roast beef on 1 piece of bread. Top with cheese.
  • Mix horseradish and sour cream together. Spread on remaining piece of bread.
  • Assemble sandwich.

Cooking:

  • Heat pan on medium heat.
  • Add 1/2 tablespoon butter to hot pan. When butter is melted turn pan to coat.
  • Place sandwich in pan, cover and cook until golden brown.
  • Remove sandwich and add remaining butter. When butter is melted turn pan to coat.
  • Add sandwich back to pan; uncooked side down.
  • Cook until golden brown and remove sandwich from pan.

Let sandwich cool for a couple minutes, cut and serve !

Three Pepper Steak Burger

For 4th of July I made hamburgers with corn and snap peas. There is nothing better than a big ole hamburger to celebrate with on the 4th. I love lots of taste so I added pepper jack cheese with onions and red peppers to top it all off.

A good hamburger is one of my all time favorites. I wanted something tasty and real with this hamburger so I decieded to make my own ground beef. To start out with I picked up two rib eye steaks. I don’t have a meat grinder but I do have a food processor. I read online that steaks will work better in the food processor if they are partially frozen. After cutting off the steak bone I put the steaks in the freezer for about 2 hours. Once they were partially frozen I removed from the freezer and cut up into smaller squares. They ground up amazingly fast in the food processor. There you have it — gound beef. Season with a liberal amount of salt. I also seasoned with ground black pepper and ground rosemary.

To cook — It’s the grill man !

After grilling the burger — I topped with pepper jack cheese, sauteed yellow onions and sauteed red peppers.

To serve — I used kaiser rolls ( just make sure your hamburger is big enough) and BBQ sauce.

Side dishes — Snap peas grilled in oil and salted. Grilled corn seasoned with paprika, salt, and black pepper.

Ham, Cheese and Pickles Sandwich with BBQ Sauce

1. Assemble ingredients (bbq sauce, ham, cheese, sliced pickels) on a hamburger bun.
2. Brown for a 2 minutes each side in pan with weight on top to compress sandwich.
3. Finish in oven @ 400 (until cheese is melted)

(My cell phone camera isn’t so good but I think you get the idea. )
