Smoked Chicken Nachos

These chicken nachos have a smoky taste that tastes great for a snack or sporting event.
The chicken was smoked until fork tender and shredded. If you don’t have smoked chicken handy a grilled chicken breast will taste great too.
Assemble the nacho with a layer of chips, cheese and chicken. Repeat with a second layer.
Bake at 400 degrees until cheese is melted.
Serve with avocado on top.
Turkey and Jalepeno Cranberry Nacho

This turkey nacho is a great snack and a good way to use up some of those turkey leftovers. The jalepeno cranberry adds an awesome spice level to this nacho. Simple to make and tastes even better.
Ingredients
- 1/2 can cranberry sauce with whole cranberries
- 1 jalepeno, diced (keep seeds to increase heat)
- 1/2 bag round tortilla chips
- 1 cup turkey, diced
- 2 cups mozzerrella cheese, grated
- 1/2 cup sour cream
Directions:
- Add cranberry sauce and jalepeno to a sauce pan. Heat on medium for 5 minutes and reduce to low for another 10.
- Pre-heat over to 375
- Place 1 layer of chips on a baking dish or pizza stone.
- Top chips with 1/2 turkey and 1/2 cheese.
- Place another layer of chips on top.
- Again, top chips with 1/2 turkey and 1/2 cheese.
- Bake for 10-15 minutes or until cheese is melted.
To serve top with jalepeno cranberry sauce and sour cream.
Thai Toast

There is this awesome Thai restaurant in Santa Barbara — Your Place . Joy packed the Thai toast into a cooler and brought it on the plane to Seattle for us to try. I was very excited as I have never tried ( or heard of ) Thai Toast.
After heating under the broiler I gave it a close inspection. It is ground pork, whole shrimp, topped with sesame seeds and deep fried on a piece of bread. Quite delicious when dipped into their spectacular cucumber, red onion, spicy vinegar sauce.
I found this recipe on the Internet for Thai toast. I have not tried it yet so I’m not sure how it compares but I will try the recipe soon.

A few weeks ago we visited Jubilee Farms pumpkin patch in Carnation, WA. The family had a great time with the animals. And I was able to score these awesome green beans. Myself and my 1 year old twins gobbled them all in just a couple days…

The Big Game Eats 2009

Here is some really great tasting food we cooked up for the this years’ “Big Game” ( Boo Steelers). It was an awesome feast and all the food was very appetizer-ish.
1. Home made potato chips. Slice thin ( use a mandolin) fry in vegetable oil and season with salt, pepper, garlic and parsley.
2. Home made pesto served on bread.
3. Smoked beef brisket served on bread for bite size sandwich snacks.
4. Beans !
